Sugar Free Creme Brulee!

Who doesn’t love Creme Brulee?  It’s an expensive, fancy dish that is usually only available at fancy restaurants, but if made properly, this is a very nutritious, low-carb and sugar free dessert! Read the rest of this entry »

Menu Plan Monday: Low-Carb, Grain-Free

Now that we are experiencing true “summer” weather here in Portland, I’ve transitioned my recipes to being as summer-friendly as possible; meaning minimizing oven usage whenever possible and “picnicable” lunches. The past several days we’ve been eating our lunches outside and it’s been so nice to enjoy lots of low-carb, nourishing “finger foods” that require very little energy to prepare and are a snap to clean up. Who thought nourishing food could be this “convenient”. I call it “peasant food”, as inspired by Sally Fallon’s explanations about how the peasants typcially ate lunch while at work in the fields: raw cheese, pickled veggies, salted meats, fermented beverages. Well, even though it’s a little late in coming, here’s the menu plan for the week. Just for the record, I *did* have it written up Saturday night! Unfortunately my two-year-old attacked my computer keyboard so some key letters are missing, making it a bit difficult to type. I’m hoping this won’t affect my posting this week! Menu Plan Monday

This week’s menu is going to be a bit of a crap shoot since we just got back into town late last night (read: early this Morning) from Santa Rosa, CA. Thankfully we managed to eat well while on the road (thanks to a cooler full of homemade stuff and a local Trader Joe’s) but it means that we’re back home to an empty (clean!) fridge (thanks, honey!!!!) So here’s what I’m thinking: Read the rest of this entry »

Grain-Free, Lenten Menu Plan

Another Lenten menu this week, with some ambitious creations, like “lentil sloppy joes“. You can imagine my elation when I realized last week that lentils are allowed on the GAPS diet! Read the rest of this entry »

Menu Plan Monday: Fridge & Pantry Cleanout

This week is considered “clean week” for Orthodox Christians. Strictly speaking, the Orthodox abstain from meat, dairy, eggs, and fish for the next 40 days in observance of Lent. Seafood with no backbone is allowed throughout, such as mussels, shrimp, oysters, calamari. Since these are very nutrient dense, this is good news for fasting. Unfortunately, for those of us who don’t live in the Mediterranean, these can be a bit pricey. The challenge this week is to not only use what I have and clean out my fridge & pantry, but to also keep things nutrient-dense and low-cost. Read the rest of this entry »

Menu Plan Monday: Fridge & Pantry Cleanout!

This week’s menu planning took place in the passenger’s seat of our car somewhere between Yakima, Washington and Hood River, Oregon. We had a lovely weekend visiting with family as we celebrated the baptism of my beautiful niece. Read the rest of this entry »

Menu Plan Monday: Grain Free under $50!

After another week of grain-free I can honestly say I feel really great! My pants are even feeling looser around the waist! We are doing the GAPS diet for the sake of my daughter, but it’s such a healthy way of eating (and my dear husband could use GAPS too!) that we do it for the whole family. In the spirit of thriftiness, I am putting together menus that are low-cost, and nourishing! Here are some recent thoughts I had about eating no-grain on a budget. This weeks menu cost less than $40 at the cash register, however I did not purchase the meat (I have a stockpile in my freezer that I purchased off the bone in bulk), so I estimate that if you add the cost of the meat, it would be about $50, even if you were to purchase the meat at the store. GAPS Menus Plan: Grain-free

January 27, 2009

As I mentioned in a previous post, we are going back to the GAPS diet for my daughter. Since GAPS is a healthy way of eating anyway, we’re all going to eat GAPS. Thankfully, I’ve had no difficulty finding delicious meals to cook. I’ve been using Rachel Albert-Matesz’s The Garden of Eating recipe book as a guide this past few weeks and every single dish I’ve made is absolutely delicious and satiating! And, to boot, I’ve lost 2 pounds!
