Low Carb & Lenten: Main Dish Salad

Lent is a beautiful, cleansing time of year, both spirtually and physically. Although I am a strong advocate of red meat and good-quality dairy, I do believe that our bodies can benefit, short term, from a break.  During past Lenten periods, I always defaulted to lots of beans,rice, soy, and pasta.  Well, I now know that that food doesn’t love me back, so I’ve tried to find nourishing (and thrifty) ways to keep the fast and also eat what my body needs! Another week of Paleo Food:

Greetings! It’s early Tuesday morning (read: I’m still up from Monday night) and I am up blogging. It was a hectic (but great!) holiday weekend, which meant little time to attend to those things around the home so I am playing “catch up”t: stock is simmering on the stove, lunch and dinner’s veggies are chopped and sorted into ziplock baggies in the fridge, the menu is planned, the co-op “goods” have been ordered, and now the menu has been planned.  I need to take a little glance at what at tomorrow’s homeschool lessons before retiring to bed, as well.
