pantry_fridgeI’m beginning to see the light at the end of my freezer!  There’s still lots there, thankfully, and I think I’m just going to keep up this Pantry-Based menu planning and utilize sale items and my CSA to round out the meals.  This week I snagged some great deals and was able to stock up on some household essentials as well as pick up great deals on my favorite organic items using a killer combination of coupons (many mentioned in this post). Week #3: Pantry Update and Menu Plan

pantrychallengeIt’s so hard to believe that we are past the ides of January and moving quickly into the twenties!  2010 is off to a pretty good start for me, aside from a really nasty head cold I had been battling since last week.  I finally started feeling better after taking some zinc today, and after a few more doses of supplemental zinc, I feel no conjestion! Who knew?  Anyway, back to the pantry challenge update:

Pantry Cleanout Menu Plan: January 11th

Another week of eating from the fridge and pantry!  I’m still excited  because there’s still enough there to make creative meals….ask me again in a couple of weeks and I might not be so jazzed. But I’ve gotta say; last week was one of the simplest meal plan weeks I think I’ve ever had (considering I cooked every night)! It was simple, the food was good, and the prep was pretty easy.  I think I’m going to start saving my more  “involved” meals for Saturdays and Sundays! Here’s what’s on tap this week:

I’ve been so excited by the challenge to eat from the pantry/fridge for the month of January (and beyond, if necessary). In a way, it makes me really thankful for all that we have and not so inclined to wastefulness.  This week, while there’s still bounty, there is a lot of inspiration and I found this menu quite easy to plan for. Another week of Paleo Food:

Greetings! It’s early Tuesday morning (read: I’m still up from Monday night) and I am up blogging. It was a hectic (but great!) holiday weekend, which meant little time to attend to those things around the home so I am playing “catch up”t: stock is simmering on the stove, lunch and dinner’s veggies are chopped and sorted into ziplock baggies in the fridge, the menu is planned, the co-op “goods” have been ordered, and now the menu has been planned.  I need to take a little glance at what at tomorrow’s homeschool lessons before retiring to bed, as well.

Baby Step #3: Saving Money by Menu Planning

Baby StepsLast week I got so busy that I didn’t make a menu plan for the week— I had to wing it! I felt very lost, but since I’m a creature of routine, I pretty much stuck with my regular breakfast routine and made use of what was in season from the garden and the CSA. Menu Plan Monday

It’s time for another menu plan! I was so excited that I actually had everything completed Saturday, but due to an unexpected “date night” (thanks to my sister-in-law) Saturday night and a full day Sunday, I didn’t get a chance to get my post up.  This week I’m excited to try a cuple of new recipes utilizing the delicious, fresh bounty of summer.  I’ve really been enjoying cooking fresh veggies from the garden and our CSA alongside a little bit of meat. That’s how our meals go these days; a little meat and a lot of veggies; sometimes cheese, eggs, and coconut flour.
