Frugal and Healthy Meal: Tongue Tacos


I know that the notion of eating tongue is probably totally unappealing to most of you; it was to me for sure. Recently, however, at an authentic Mexican restaurant, I ordered tongue tacos and they were delicious and inexpensive! When I found out that my grass-fed, organic beef farmer sold tongue for $2.50/lb, I had to figure out a way to use it in a delicious way. You know how sometimes you google a recipe you want to find and it’s a bust? Well, that happened tonight; I wanted grain-free Indian Naan (a tall order, I know…but surely someone in the great blogosphere had done it?) Alas, no luck. So, in the absence of a recipe, I modified a grain-free “skillet bread” recipe and came up with a delicous, grain-free, savory Indian flatbread to accompany a delicious, frugal, and nourishing curry I’d made. It’s wintertime, which means soup is a mainstay at our house. I find soups to be the gold star winner for fast, frugal, and freezer-friendly.
