Weekly Menu Plan: Low Carb, Grain-Free

This week my goal for menu planning was to use what I have on hand and make things as simple as possible. We have a lot going on this week in the way of evening activities, and I don’t have time for complex prep. The weather promises to warm up this week as well, so I want to avoid using the oven as much as possible. We are still observing the Apostle’s Fast, so we’ll be frequenting the wild salmon (which I purchased frozen for $2.99 at Grocery Outlet!) cooked simply with fresh herbs and garlic. Menu Plan Monday: Low-Carb, Grain-Free

Now that we are experiencing true “summer” weather here in Portland, I’ve transitioned my recipes to being as summer-friendly as possible; meaning minimizing oven usage whenever possible and “picnicable” lunches. The past several days we’ve been eating our lunches outside and it’s been so nice to enjoy lots of low-carb, nourishing “finger foods” that require very little energy to prepare and are a snap to clean up. Who thought nourishing food could be this “convenient”. I call it “peasant food”, as inspired by Sally Fallon’s explanations about how the peasants typcially ate lunch while at work in the fields: raw cheese, pickled veggies, salted meats, fermented beverages. Menu Plan: Week of May 4

It’s hard to believe that the first of May is already here. My “baby” niece turns one today, and that’s unbelievable because I can vividly remember going to see her at the hospital just a few months ago it feels. Happy Birthday, dear Susannah! What a blessed, happy, chunky baby she is! Nourished by her mama with real food and real milk, it’s so amazing to see that radiant health is possible, by God’s grace, in this fallen, broken world. Nutrition for families and children. This was the topic of conversation at the Northwest Family Homeschool Conference that I was blessed to speak at this past weekend. I am so honored and was overjoyed to meet so many amazing, inspiring families whose faith is foremost in their lives! I had so many wonderful conversations with folks who are on their own difficult, challenging health journeys like our own.

Menu Plan Monday: Fridge & Pantry Cleanout

This week is considered “clean week” for Orthodox Christians. Strictly speaking, the Orthodox abstain from meat, dairy, eggs, and fish for the next 40 days in observance of Lent. Seafood with no backbone is allowed throughout, such as mussels, shrimp, oysters, calamari. Since these are very nutrient dense, this is good news for fasting. Unfortunately, for those of us who don’t live in the Mediterranean, these can be a bit pricey. Menu Plan Monday: Grain Free under $30!

This week I did online shopping at New Seasons (which, if you haven’t done before and want to try, you can do for free. Mention that I referred you and we’ll both get a free delivery! Very cool). I chose the “store pick-up” option which allows me simply to pull up and wait in the car for my bags to arrive. I was able to shop from the comfort of my laptop,cruise the good deals (in peace and quiet!) and even with the pick up fee of $4.99, I still spent under $30 and I resisted a myriad of impulse purchases (not to mention “Mommy can I PUH-LEEEEEASE get a Lara Bar?”) and saved a lot of time and energy out of my day!

My menu once again this week is grain-free and GAPS. I want to thank the amazing Baden of the GapsGuide blog for her wonderful inspiration on shredding cauliflower and cooking/flavoring it like rice! And Simple Natural Nourishing has an amazing recipe for Roasted Cauliflower which was literally the most amazing cauliflower ever. Oh, and I’m also sneaking in some beef tongue! Menu Plan Monday: Grain Free under $50!

After another week of grain-free I can honestly say I feel really great! My pants are even feeling looser around the waist! We are doing the GAPS diet for the sake of my daughter, but it’s such a healthy way of eating (and my dear husband could use GAPS too!) that we do it for the whole family. In the spirit of thriftiness, I am putting together menus that are low-cost, and nourishing! Here are some recent thoughts I had about eating no-grain on a budget. This weeks menu cost less than $40 at the cash register, however I did not purchase the meat (I have a stockpile in my freezer that I purchased off the bone in bulk), so I estimate that if you add the cost of the meat, it would be about $50, even if you were to purchase the meat at the store.
