Sounds really good, Carrie! We use Duck Eggs at camp and they make killer french toast-I add a bit of whole milk, sweetner (sugar in this case) and a bit of vanilla. My recipe is for 340 pieces of bread, so I don't think it is of much use here, but if you have a 'bread' to use, you can do the same with smaller amounts. I also find a bit of buttermilk added to the eggs helps with the flavor for scrambled eggs. None of the kids are any wiser :) Which is good, as they are donated.
I'll have to try the almond meal and look for the coconut nectar. This should be a yummy treat-just glad I have no food issues, so I can enjoy the whole thing :)

ooooh, sounds so yummy! Just found your blog in a search for GAPS encouragement...we're about to start (just as soon as summer travel winds down). :) I know I'll be reading frequently for encouragement.

and where oh where do you find duck eggs? I've run out of ideas for places to look...they are elusive out here in the Midwest, but I'm wondering if they're hiding somewhere I just haven't thought to look!

Thank you for all your hard work! Makes the adventure of healing our bodies feel a little less intimidating!

Carrie - these look really delicious! A number of bloggers were having a conversation this week on my Facebook page about grain-free foods and recipes, and I have just bought my first bag of Bob's Red Mill organic almond flour. I have been wondering about almond flour for sometime. I'd like to make my own from almonds and soak them before hand, but I can see realistically with all the other food preparation I do (which is quite a lot) that I don't know if I'll ever get around to this task. Have you ever soaked your own almonds and made flour from them?

This looks great! I too use the TJ brand of almond meal for many baked goods. I do find there is a difference between it and the blanched kinds but it works great for most things. I like to use the blanched kind for things like pizza. Or if I make my own flour in a coffee grinder with almonds, it seems like it is finer than the TJ brand and works great for more delicate dishes like crackers and pizza. I sometimes buy blanched slivered almonds and make flour out of them and it keeps the price down - but it's definitely more work!

anyway! I too have been wanting to try the coconut nectar. I saw it at one of the local markets and almost got it. I will try it out sometime soon...

thanks - I'm going to give this a try with blueberries since we don't have cherries, and delete the chocolate chips and baking soda since we're on GAPS.

thanks so much,
sarah
