Waffles have got to be the hardest thing to give up when you go off of grains, but no longer!  I’ve been experimenting with grain-free waffles for a while, but it’s really hard to find a good texture and taste that works.  But I think I’ve landed on a winner!Angela, a friend of mine (whom I met through this blog!) is the amazing mother of two children on the GAPS diet.  She shared this recipe with me, inspired by one found at Mark’s Daily Apple, another great grain-free blog!

These waffles are a great protein-rich way to start the day, with good fats and a negligible amount of carbohydrates.  Top with fresh sliced fruit, butter, a little whipped cream…..or just eat plain!

Grain-Free Waffles
-Makes 4 Waffles-
(Adapted from Mark’s Daily Apple)

4 eggs
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 tablespoon honey
1/4 cup coconut milk (full fat) or dary milk

1. Scramble the eggs. 

2. Add the vanilla, nutmeg, cinnamon, honey, and milk.

3. Add the coconut flour and mix until there are no more lumps.

4. Pour into hot waffle iron and cook for about 5 minutes, until done.

5. Enjoy!

*These freeze well; make a large batch on Sunday or Saturday and have quick, grab-and-go frozen breakfasts throughout the week!

    Could you use this same recipe for pancakes? We don’t have a waffle maker, so we’ve been experimenting with different nut flours for pancakes. So far they don’t stay together too well. My son is GF and since he’s 4, the rest of us are working our way towards GF too.

    I just tried this recipe and it turned out terrible! Mine were very very dry and crumbly and the dough, before cooking, was dry too…thick like cookie dough, not at all like a waffle batter.

    I used two truvia packets instead of the honey, but added a tablespoon extra liquid to make up the difference. Could that be the problem?

    And I’m wondering, where is the leavening agent in these waffles?

    I’d love some tips. I’ve not tried making coconut flour waffles before today. Have, however, perfected the art of making coconut flour cake. ;-)

  8. Hello! Thanks for sharing this recipe, it looks delicious. I am always excited to find gluten free recipes because my husband and I do not eat wheat gluten.
    I do not have a waffle iron and I was wondering if this recipe could work for pancakes? Just curious. Thanks.

    Oh I’m so sorry! I did that too the first time I tried making them! You know, every time I try to substitute truvia for liquid sweetener in a baking recipe (particularly pancakes/waffles) it always gets screwey, so lately I’ve just said “oh what the heck, I can take a few extra carbs” and threw in the honey.

    The dough will be on the drier side (coconut flour absorbs a TON of water). I’ve also found that sometimes the SIZE of my eggs makes a difference; if I’m using some eggs on the smaller side, I sometimes add some extra water to wet the dough a bit more.

    The eggs act as a leavening agent in these waffles, but if you wanted to add 1/2 tsp of baking soda for good measure, you could. GAPS diet protocol generally avoids baking soda, but if you’re not dealing with hypochlorhydria, that shouldn’t be a problem ;) .

    Did you use dairy milk or coconut milk, by the way? I find that the coconut milk makes them a little too thick, and so I usually water down the coconut milk or use dairy milk.
