It takes lots of time and patience to balance out a child's diet. He was a carb junkie, but loved italian food like meatballs, so that helped. I could also make turkey or chicken into meatballs, and pack that in his lunch. Lunch was the first meal we started making "grain free". I would generally pack some form of meat he liked, sliced fruit, and now we are up to veggie fries or a nut meal cookie, sometimes a dairy free pudding or a mini pumpkin pie (larger version of Squash buttons recipe on pecanbread.com). It all starts one meal and snack at a time, introducing healthier versions of their favorite foods and new healthier foods like turkey, veggies, fruits, etc.
What saved the day for us was joining an amazing autism association called Talk About Curing Autism Now, which is nationwide. They have a huge recipe database (GFCF and SCD recipes) and referred me to websites that also had SCD or GAAPS diet recipes. When I went to one of their local support meetings, I was handed a free handbook on curing autism that had all the recipes in it, and everything I would ever want to know about biomedical approach to autism.
Here are the websites I want to share. Anybody on a special diet can use these for their kiddos. they have great healthy meals and snacks my kids love to eat!

great post. I love your ideas and will send parents I work with to your site to read this. I see so many parents do allergy diets for their kids and try so hard to make starchy look like, taste alike products for their picky children. They spend so much money on their experiments and if the kids do eat the pancakes, waffles, breads, cookies, muffins....sometimes the only things I'm told they will eat, they miss out on meats and veggies and fruits and good fats.

Andrea,

The great thing about sunflower seeds is that they sprout very quickly, about 12 hours or so! So if you started early enough in the morning, you'd have them ready by suppertime!

I love Nourishing Traditions as well as Paleo Food!

I can imagine garbanzo bean flour would make a great crust; almost like a falafel!

Jen,

That is great news!!! I think the gradual approach is a very realistic one, and thanks for chiming in from that perspective (as you know we had no choice but "cold turkey"). I know, it's amazing how quickly my carb addict became a veggie addict!!

Carrie-
Thanks for your response! I will try soaking the flour, we'll see how that works. I do also want to try your sunflower crust recipe- now that you mention it, I remember seeing it not too long ago. I think I may have been a little intimidated by the sprouting, but now that I've been in the low carb/wheat free world for a couple months now I think I'm ready to get a little more complicated!

I was very surprised that the crust I made came out so great. I've tried a couple of different variations using just garbanzo bean flour and they never worked. I also don't really enjoy the flavor of it by itself, though it was awesome mixed with the almond and arrowroot. I was really concerned the almond meal would make it taste to almondy, but it didn't at all.

As for other recipes, Sally Fallon's book called Nourishing Traditions is a great resource which I've seen you mention, and then http://www.paleofood.com is nice as well..probably the best as far as clean/paleo recipes. It's simple and straight forward and separated into categories to make things easy to find.

My little carb addict is getting better and better with our gradual approach. She often doesn't finish her "breads" but is great about fruits and veggies. We had broccoli and cauliflower cooked with butter and sprinkled with cheese the other night and as both my kids inhaled it they announced it was just like a treat.

thanks for your ideas and encouragement!
