great post. I love your ideas and will send parents I work with to your site to read this. I see so many parents do allergy diets for their kids and try so hard to make starchy look like, taste alike products for their picky children. They spend so much money on their experiments and if the kids do eat the pancakes, waffles, breads, cookies, muffins....sometimes the only things I'm told they will eat, they miss out on meats and veggies and fruits and good fats.

Andrea,

The great thing about sunflower seeds is that they sprout very quickly, about 12 hours or so! So if you started early enough in the morning, you'd have them ready by suppertime!

I love Nourishing Traditions as well as Paleo Food!

I can imagine garbanzo bean flour would make a great crust; almost like a falafel!

Jen,

That is great news!!! I think the gradual approach is a very realistic one, and thanks for chiming in from that perspective (as you know we had no choice but "cold turkey"). I know, it's amazing how quickly my carb addict became a veggie addict!!

Carrie-
Thanks for your response! I will try soaking the flour, we'll see how that works. I do also want to try your sunflower crust recipe- now that you mention it, I remember seeing it not too long ago. I think I may have been a little intimidated by the sprouting, but now that I've been in the low carb/wheat free world for a couple months now I think I'm ready to get a little more complicated!

I was very surprised that the crust I made came out so great. I've tried a couple of different variations using just garbanzo bean flour and they never worked. I also don't really enjoy the flavor of it by itself, though it was awesome mixed with the almond and arrowroot. I was really concerned the almond meal would make it taste to almondy, but it didn't at all.

As for other recipes, Sally Fallon's book called Nourishing Traditions is a great resource which I've seen you mention, and then http://www.paleofood.com is nice as well..probably the best as far as clean/paleo recipes. It's simple and straight forward and separated into categories to make things easy to find.

My little carb addict is getting better and better with our gradual approach. She often doesn't finish her "breads" but is great about fruits and veggies. We had broccoli and cauliflower cooked with butter and sprinkled with cheese the other night and as both my kids inhaled it they announced it was just like a treat.

thanks for your ideas and encouragement!

@Pampered Mom,

Oh, i feel for you!! I have thanked my lucky stars many times that we are okay with almonds and eggs; and I realize that this isn't true for everyone! Thanks for sharing your perspective; I realize that my suggestions are predicated upon a reliance on eggs and nuts!

If I didn't have eggs and nuts, I would do exactly as you are, emphasizing quality, properly prepared whole grains (brown rice, sorghum, millet, quinoa, etc.). We have to do the best we can with what we've got for sure!

And hopefully, as your family continues to heal, you will be able to gradually add in eggs and use coconut flour soon!

Best,
Carrie

Unfortunately we're facing multiple food sensitivities so coconut flour is out because of it's heavy reliance on eggs. I have yet to find a recipe using coconut flour as it's main flour that doesn't need eggs. I'm actually a bit disappointed in this since I have a pound of it in my freezer.

At this point I'm hesitant to try almond flour just because we haven't yet gotten the test results back to see if almonds are a safe choice. For now I've been working with your standard GF recipes, but sticking with whole grain flours and arrowroot for the starch. Not ideal, but better than all the white stuff typically used.

If almonds end up being ok I'm definitely looking forward to using the recipes over at Elana's Pantry!
