One note...you can make the crustless frittatas in a muffin pan ahead of time.  They can be popped in the toaster oven OR eaten cold.  It&#039;s also an easy way to vary the veggies by serving as you fill the muffin cups.

You can also bake unbeaten eggs in a muffin pan (I use stoneware)...I like to make a patty of natural sausage or lay some ham in the bottom, add any sauteed/leftover veggies, add S&amp;P and then crack an egg on top.  I bake until the whites are set but I like my yolks runny (especially if I plan to reheat in the toaster oven another day).  It&#039;s the middle of an egg sandwich! :)  The egg whites tend to drain down through layers and then cook...gluing everything together.</description>
