Nice to have you here!  Were you referring to the muffin picture posted on the &quot;Breakfasts for Busy Moms&quot; Post? If so, then those were actually almond flour muffins (I&#039;ll post the recipe next week so check back :). Those are really good, not eggy at all, and really form rather nicely.

The coconut flour muffins can tend to be a bit eggy I suppose, but I guess I&#039;ve just gotten so used to it that I don&#039;t notice anymore! It is a transition!

Another idea I like is Bruce Fife&#039;s recipe for his Coconut Biscuits. They are more like scones, and are really quick to make. They use about the same ingredients as the muffins, but I find they taste less eggy and you don&#039;t have to deal with muffin tins or muffin cups. If you get the book it has lots of other good recipes too. I will post the scones recipe in a future post as well!
